What's Cooking heads to Chestnuts Farm, home of Caz Griffin's Dargle Valley Pork, where we get treated to her house speciality: a splendid bacon, lettuce and tomato sandwich.
The recipe is featured in East Coast Tables: The Inland Edition, and is as she gave it to authors Erica Platter and Clinton Friedman, with her own emphases.
Recipe and method:
You need PLENTY of bacon. Fried crisply. Crispy lettuce and rocket. Some vine or other tomatoes with TASTE! A nice ciabatta loaf is best, but ordinary bread will do. Slice the bread. Toast it, then butter on BOTH sides. Pile the lettuce and sliced tomatoes on top. Then the bacon. And then - this is the SECRET - mix together all the dressing ingredients, and pour liberally over BLT!
Blue cheese dressing
1/2 cup homemade or quality mayonnaise
1/2 cup fresh cream
1/2 cup natural yoghurt
1 tsp Dijon mustard
1 1/2 cups blue cheese (more or less to taste)
* East Coast Tables: The Inland Edition will be available soon in all leading bookstores.
