Sweet Treats For Mother’s Day Breakfast

1. Classic flapjack stack
Makes about 25 flapjacks
Ingredients
• 500ml flour
• 2 eggs
• 4 Tbsp sugar
• 1 Tbsp butter, melted
• 4 tsp baking powder
• ½ tsp salt
• 250ml milk
• A few drops of vanilla essence
Method
1. Beat the eggs well with an electric mixer
2. Add the sugar gradually, while mixing
3. Pour half of the milk and the melted butter to the egg mixture
4. Mix well
5. Sift the flour, baking powder and salt in a separate container and pour into the egg mixture
6. Stir in the remaining milk and vanilla essence slowly to form a smooth mixture
7. Stop stirring as soon as all the ingredients are well mixed
8. Drop spoonfuls of batter into a greased heavy bottom frying pan on medium heat
9. Flip them over with an egg lifter when you see lots of air bubbles on the surface of the flapjack
10. Cook the other side through for a few minutes.
Create an impressive stack by piling 6 or more crumpets and drizzling with syrup for a shiny finish. Top it off with chocolate chips or Mom’s favourite fruit, chopped up into small pieces, and finish with dollop of whipped cream for extra indulgence.
2. Decadently simple chocolate tarts
Chocolate for breakfast seems like a sinful treat, but since it’s Mother’s Day, you’re allowed at least one tasty, life changing indulgence.
• 1 package of puff pastry, thawed
• 1 egg lightly beaten
• 1 chocolate slab chopped up, or ½ cup of Nutella
1. Roll out the puff pastry on a floured surface to about 6.5mm thick. Cut the pastry into rectangles about 10cm long and 5cm wide.
2. Smear a dollop of Nutella or about two teaspoons of chopped chocolate onto one end of the rectangle and roll up the pastry into a tight ring.
3. Brush with beaten egg and bake it at 200ºC for 20 minutes, or until golden brown.
Serve this delicious treat with a cappuccino and some fresh fruit on the side.
