Try this oxtail Potjiekos recipe for Christmas

Gather the family around the fire and make this great potjiekos for Christmas.
All you need is fire, coal, a three-legged pot, ingredients, and the great company of your loved ones.
Let's get on with it. Below is what you will need to make this delicious oxtail dish:
30 ml butter
30 ml cooking oil
1.5 kg oxtail diced into small pieces
Seasoned flour for coating
1 onion sliced
3 cloves of garlic sliced
4 diced large carrot chopped into big chunks
1 large stick of celery
2 sprigs rosemary
125g mushrooms diced
12 baby onions which are peeled
12 baby potatoes
250ml beef stock
30ml tomato paste
500ml red wine or you can use grape juice to substitute the wine
Salt and pepper for seasoning
How to make it:
Heat the potjie pot over moderate coals.
Coat the oxtail pieces in seasoned flour to ensure that they come out looking golden brown.
Heat the butter and oil in the potjie.
Add the meat and brown it for a few minutes. Remove from pot and set it aside.
Add onion, garlic, carrot, celery, and rosemary, and fry until softened.
Add the remaining vegetables and heat through.
Put back the meat, followed by the hot stock, tomato paste, and wine.
Cover and simmer gently over moderate heat for four hours.
Enjoy with pap, rice or dumplings.
