Friday night dinners just got tastier with this finger-licking good loaded fries recipe.

Show me a person who doesn't like fries, and I will show you a ghost.
With a popularity rating of over 80%, it is very rare to find someone who isn't a fan of deep-fried potatoes.
Whether you call them French fries or potato chips, they rank up there with melted cheese.
Food blogger Landi Govender's cheesy peri-peri chicken loaded fries recipe has both, which is a win-win for Friday night dinners.
"All you need for these drool-worthy [fries] is a bottle of Pedros Peri-Peri sauce! Crispy golden fries, gooey melted cheese, spicy Peri-Peri chicken, pickled jalapeños, and red onion," Govender said.

Cheesy peri-peri chicken loaded fries
Ingredients
For the chicken:
2 chicken breast fillets, cubed
½ cup Pedros Peri-Peri Hot Sauce
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
½ tsp salt
For the fries:
500g potato chips (deep-fried or air-fried)
Toppings:
1 cup grated cheddar cheese
¼ cup pickled jalapeños
¼ cup red onion, diced
Pedros Peri Mayo, to drizzle
Fresh coriander, roughly chopped
Method
In a bowl, mix the cubed chicken with Pedros Peri-Peri Hot Sauce, olive oil, smoked paprika, garlic powder, and salt. Let it marinate for at least 15 minutes (or longer for deeper flavour).
Heat a pan over medium-high heat. Cook the marinated chicken for 6–8 minutes until golden, slightly charred, and cooked through. Set aside.
Deep-fry or air-fry the potato chips until crispy and golden. Season lightly with salt if needed.
Spread the fries in an ovenproof dish or air-fryer basket. Sprinkle the grated cheddar cheese evenly over the fries.
* Oven: Bake at 180°C for 5–7 minutes or until the cheese is melted and bubbly.
* Air-fryer: Cook at 180°C for 3–5 minutes until the cheese melts.Once the cheese is melted, top the fries with the cooked Peri-Peri chicken, pickled jalapeños, and diced red onion.
Drizzle generously with Pedros Peri Mayo and sprinkle with fresh coriander. Serve immediately and enjoy!
