Recipe: How to make Darren Maule's Great Granola

It's the festive season and we always looking to get those last minute shopping for Christmas.
So ECR breakfast show host Darren Maule has come up with a way to make it easy for people to have the perfect gift while not spending to much.

The question is, are you hosting loved ones for Christmas but running on a low budget?
This is how you can still make Christmas special without breaking your bank balance.

Servings: 12 people
Cooking time: +/- 40 minutes
Prep time: 10 minutes

To make this meal, here are the ingredients..
Ingredients:
3 Cups Rolled Oats, 1/2 Maple Syrup, 1/4 Refined Coconut Oil (melted), 1/2 Cup Raw Pumpkin Seeds, 3/4 Shaved Coconut and Pinch of Salt.
Here are also optional add-ins (after baking):
Chia seeds, Goji Berries, Dark Choc Chips and Dried Cranberries
Directions:
Pre-heat your oven to 120 C.
In a large bowl pour all the ingredients and mix thoroughly.
Grease the bottom and sides of your baking tray with coconut oil.
Transfer your mixture to the baking tray and bake on the centre of the rack of the oven for 40-60 minutes or until golden brown. Don’t forget to stir every 10-15 minutes.

When removed from the oven, let it cool completely and stir occasionally. Once completely cooled, now is the time to add in your chia seeds, goji berries or any other add-ins that you fancy.
Transfer to your favourite glass jar and voila.
Add a bow and a tag for the perfect gift made with love.
Enjoy with some Greek yoghurt and fresh fruit!
